- Coarsely chop yams, celery, carrots.
- Add chopped vegetables, minced garlic and meat to large crock-pot and mix.
- Add chickpeas, tomatoes, coconut milk, and diced sweet potatoes.
- Add chimichurri seasoning and salt and mix again.
- Set crockpot to cook for 8 hours on low.
- Stir at the 4-hour mark.
Cooking Tip
Enjoy this recipe with couscous, rice or quinoa for an extra carbohydrate boost, especially after a hard training day. This recipe works well with beef sirloin, tenderloin or round.
