Beef Stew


  • 1 3⁄4 lb. beef stew meat
  • 3 tablespoon minced garlic
  • 2 medium garnet yams
  • 4 cups celery
  • 2 cups carrots
  • 1⁄4 cup chimichurri seasoning
  • 1 tablespoon salt

  • Coarsely chop yams, celery, carrots.
  • Add chopped vegetables, minced garlic and meat to large crock-pot and mix.
  • Add chickpeas, tomatoes, coconut milk, and diced sweet potatoes.
  • Add chimichurri seasoning and salt and mix again.
  • Set crockpot to cook for 8 hours on low.
  • Stir at the 4-hour mark.


Cooking Tip

Enjoy this recipe with couscous, rice or quinoa for an extra carbohydrate boost, especially after a hard training day. This recipe works well with beef sirloin, tenderloin or round.
