Berry Quinoa Salad



  • ½ cup dry quinoa (makes 1 cup cooked)
  • ½ lime, juice and zest
  • ½ tbps. agave or honey
  • 1 cup mixed berries - blackberries, blueberries, raspberries, strawberries
  • Optional: add mixed nuts or seeds


  • Amount: ½ cup

  • Bring 1 cup of water to a boil.
  • Add quinoa and reduce heat to a simmer.
  • Let cook for about 15 minutes or until all of the water is absorbed.
  • Stir in lime juice, zest, and sweetener of choice.
  • Add mixed berries and any additional add-ins.


Cooking Tip

Pair this dish with our Roasted Pork with Avocado Salsa recipe or your favorite grilled dish.  Make this dish into a meal by adding it to a bed of greens, bowl of Greek yogurt and topping with nuts and seeds.  Warm it with some milk and add nuts or seeds to make a breakfast porridge. 


Performance Fact

Quinoa is rich in vitamins, minerals, and fiber.  It is the only plant protein source that is a complete protein, meaning it provides all essential amino acids.  Different color quinoa have very similar nutrient profiles.
