Olympic Medal Pancakes

Ingredients
Pancakes 1 cup rolled oats |
Berry Compote 1/2 cup strawberries, halved |
Directions
- For the Berry Compote: combine all ingredients in a saucepot and cook over medium heat until thickened.
- For the Pancakes: place oats in a blender and whirl until pulverized.
- Add all the other ingredients and whirl, keeping flaxseeds intact.
- Heat coconut oil on a griddle or grill, and place dollops of batter onto griddle, cook until golden on both sides.
