Roasted Tomatoes with Broccolini


1 pint fresh pear or grape tomatoes
6 tablespoons olive oil
Salt and fresh ground pepper
1 bunch broccolini 
  2 cloves garlic
½ teaspoon red pepper flakes
Zest of one lemon


  • Preheat the broiler to low.
  • Put the tomatoes on a baking sheet and drizzle with 3 tablespoons of olive oil. Season with salt and pepper and shake the baking sheet so the tomatoes roll around and get covered with oil. Place under the broiler until lightly charred and softened, about 10 to 12 minutes.
  • Blanch the broccolini in a large pot of boiling salted water for 2 minutes. Drain and submerge in a bowl of ice cold water. Once chilled, transfer to a baking sheet lined with a paper towels and pat dry.
  • Heat remaining olive oil in large skillet. Add the garlic, red pepper flakes and sauté for 1 minutes. Add broccolini, roasted tomatoes and sauté for 2 minutes. Mix in lemon zest, transfer to a plate and serve.
